  11. Prepare 10 ml Chicken Stock Powder
  12. Prepare 15 ml Fish Sauce
  13. Prepare 1,2 kg Prawn meat
  14. Use 25 ml Soya Sauce
  15. Take 1 can Coconut Cream
  16. Prepare 45 ml Coconut Oil
  17. Prepare 250 g Julienne Carrots
  18. Prepare 250 g Mangetout Peas
  19. Prepare 8 Spring Onions
  20. Take 1 large Red Bell Pepper, sliced
  21. Prepare 200 g Broccoli
  22. Prepare 170 g Medium Rice Noodles
  23. Prepare Fresh Coriander
  24. Take Pickled Ginger

Add both mushrooms, soy sauce, ginger and fish sauce. Now add the stock, coconut milk, fish sauce, sugar, lime juice, soy sauce and rice to the pot. Bring soup to a simmer, where small bubbles just break on the surface. Melt butter in a large stockpot or Dutch oven over medium high heat.

Instructions to cook Tai Prawn Soup:
  1. Sauté Onions, Garlic and Ginger in 30 ml Coconut Oil.
  2. Add the Thai 7 Spice, Green Curry Paste and Ground Coriander, and fry till fragrent.
  3. Add in Butternut, Mushrooms, Boiling Water, Stock Powder and Fish Sauce, and simmer until Butternut is soft.
  4. Add in Prawn, Soya Sauce and Coconut Cream.
  5. Fry all the vegetables in 45 ml Coconut Oil, till el dente.
  6. Place Rice Noodles in Boiling Water as per the package cooking instructions.
  7. To serve: Spoon soup into a soup bowl, add some noodles and finish off with the stir fried vegetables. Garnish with Fresh Coriander and Pickled Ginger.
  8. Done and ready to serve!

Add shrimp, salt and pepper, to taste. Add garlic, onion and bell pepper to the stockpot. Stir in the baby corn and mushrooms. Add prawns and sear both sides until light golden (doesn't need to cook inside). If pot is looking dry, add a touch of extra oil.
