Working in batches cook for 2 minutes (oil temperature will drop to 360F), agitating occasionally. Remove the fries and place on another baking sheet fitted with a paper-towel-lined rack. Let oil heat again to 395F. Repeat with the rest of the fries until all of them have been blanched in the oil for 2 minutes.
  3. Let the fries cool and dry on the rack for 1 hour, and then freeze them. Store in a plastic bag or container until ready to give them the final fry. If eating on the same day, freeze at least for a few hours.
  4. Reheat the reserved oil until the gauge reads 395F (2nd fry). Working in batches, add the fries to the oil, and cook until the fries are light golden in color, about 6 minutes. Agitate the fries with a slotted spoon or spider during the cooking process to ensure even cooking. Adding the fries will have lowered the temperature of your fryer but adjust as needed in order to maintain 360F.
  5. Remove the fries from the oil into a bowl lined with paper towels. Season all over with kosher salt, and serve at once.
  6. Done and ready to serve!

Slice potatoes long ways and then cut into fry-shaped pieces. Return to the bowl and toss with the oil until evenly coated. Spread out on baking sheets so the fries are in a single layer.
