- Soak dried shiitake mushrooms with 2 cups of water for 30 minutes to 1 hour.
- Thinly slice reconstituted mushrooms, pork, and shallot.
- Cut Chinese chives to about 1-1/2 inches long. Clean bean sprouts under water and set aside.
- In a frying pan add 2 tablespoons of cooking oil. Then add shiitake mushrooms and sauté until fragrant. Add shallot and sauté with medium high heat until fragrant. Add sliced pork and cook until the meat is no longer pink. Add 1 tablespoon of soy sauce and then take out and set aside.

- Add cooked pork/mushrooms/shallot mixture on top of the noodles. Add about 2 to 3 tablespoons full of this mixture. Serve warm and enjoy.
