  1. Use 1 pack Linguine/Spaghetti,
  2. Prepare 250 g Mixed Seafood (prawns, mussles, scallops, calamari)
  3. Prepare 1 can Chopped Tomatoes
  4. Prepare Red Pesto, 2 tbsp (optional)
  5. Prepare 1 tsp Tomato Paste,
  6. Use Dry White Wine, 1/2 cup (optional)
  7. Prepare 3 scotch bonnets (ata rodo)
  8. Use 1 Red Onion
  9. Prepare 2 Garlic Cloves
  10. Prepare 1 tbsp Parsley (fresh or dried),
  11. Prepare 1/2 tbsp Basil (fresh or dried),
  12. Use 2 tbsp Olive Oil,
  13. Prepare Salt (to taste)
  14. Prepare Black Pepper (to taste)

Melt butter in a large electric skillet set on medium temperature. Add onions and garlic to skillet; saute until tender. Stir in shrimp and saute until barely pink. Remove scallop mixture from pan; keep warm.

Instructions to cook Spicy Seafood Pasta:
  1. ​ Chop onion.
  2. Finely chop garlic.
  3. Chop parsley.
  4. Chop basil.
  5. Chop scotch bonnets/ata rodo (with or without seeds).    ​
  6. Cook pasta according to its packet instructions, drain and set aside.
    1. In a large skillet, heat 2 tbsp of olive oil then add onions and garlic and fry together on low heat for about 2 minutes or until transparent.
    1. Stir in chopped tomatoes, chopped bonnets and tomato paste and simmer on low heat for 8 minutes, stirring occasionally.
    1. Stir in 2 tablespoons of red pesto (optional) then add ½ a cup of water, stir and continue to simmer for a further 3 minutes before seasoning with salt and black pepper (to your taste).
    1. Stir in the mixed seafood, parsley and basil then add wine (optional), cover the skillet and allow the seafood sauce to simmer for 5 minutes (if seafood is fresh) or 10 minutes (if frozen).
    1. Remove the lid from the skillet, stir the sauce (if it has dried out a little, add ½ a cup of water or until desired consistency is achieved) then fold in cooked pasta and stir until well incorporated.

Make the sauce: Remove the seafood from the pan and set aside. In the same pan, melt the butter and add the garlic and chilli flakes. Cook until fragrant then pour in the lemon juice and wine. Bring to a simmer and allow to reduce by half. Pour in the cream and allow to come to a simmer.
