Season the chicken with the salt and pepper. Beat the eggs in a wide shallow bowl. Dredge the chicken in flour, tapping off the excess. Dip chicken in the beaten egg, then dredge in breadcrumb mixture, turning to coat both sides.

  1. Spray 13x9 baking dish with nonstick cooking spray.
  2. Whisk eggs, salt, & pepper until blended. Dip chicken in egg mixture & coat with cracker crumbs.
  3. Heat oil in large skillet over medium-high heat until hot. Add chicken. Cook chicken until browned on both sides, about 3 minutes per side. Drain. Arrange in single layer in prepared baking dish.
  4. Preheat oven to 350 degrees. Wipe skillet with paper towel. Combine tomato sauce, basil, & garlic powder in the skillet & mix well. Bring to a boil, stirring occasionally. Reduce heat.
  5. Simmer, stirring occasionally, until mixture is thickened, about 6 minutes. Stir in butter. Pour over chicken. Sprinkle with parmesan cheese.
  6. Bake, covered, for 30 minutes. Remove the cover. Top each chicken breast with mozzarella cheese. Bake 10 minutes longer.
  7. Done and ready to serve!

Place the chicken cutlets between two pieces of wax paper and pound thin. Spread the seasoned flour out in a tray or a plate, beat the eggs in a shallow bowl, and spread the bread crumbs out in a tray or plate. The chicken will finish cooking in the oven.
