Ingredients and seasonings used for prepare
  1. Prepare 400 g Mixed Fish (Salmon, Plaice, Basa etc.)
  2. Prepare 100 g Prawns
  3. Prepare 100 g Scallops
  4. Prepare 2 Leeks
  5. Prepare 60 g Butter
  6. Prepare 300 ml Creme Fraiche
  7. Prepare 4 tbsp Lemon Juice
  8. Use 1 tsp Dijon Mustard
  9. Prepare 2 tsp Cumin
  10. Prepare 1/2 tsp Dill
  11. Prepare to taste Salt
  12. Prepare To taste Pepper
  13. Take 1 kg Potatoes
  14. Prepare 180 ml Milk

To make the creamy sauce, start by cooking off some onion and garlic in butter. Once these have softened, stir through some flour and slowly add the broth (I like to use seafood or shrimp stock, but vegetable will work too). This will thicken to a glossy sauce. Mash the potatoes Add butter, milk and pepper to the boiled potatoes and mash until smooth and fluffy.

Instructions to cook Creamy Fish Pie:
  1. Thaw frozen fish.
  2. Preheat the oven to 160C.
  3. Drain and pat defrosted fish dry, cut into 1cm chunks, set aside.
  4. Cut Leeks into 1cm chunks, wash in bowl of warm water, dry using colander, set aside.
  5. Create a creamy sauce by mixing the 300ml Creme Fraiche with Lemon Juice, Mustard, Salt and Pepper as preferred.
  6. Butter a casserole dish and put it in the oven to warm up.
  7. In a frying pan melt 20g of Butter, add Cumin, add in the Leeks, salt and pepper as preferred. Cook on high until slightly browning.
  8. Line the casserole dish with Leeks, put aside.
  9. Add 20g of Butter to the pan, add Cumin and dill
  10. Add the mixed fish, cover all sides with the butter, cook for 3 minutes before adding the scallops for 1-2 minutes. Add the Mixed Fish, Scallops and uncooked Prawns into the casserole dish, and drizzle Lemon Juice over the dish.
  11. Add the Creme Fraiche sauce over the Fish and put casserole dish in the oven for 25 minutes
  12. While the fish pie is cooking, cut Potatoes into cubes and cook in salted hot water in a pan, until soft, about 20 minutes. Drain and mash the potatoes with a small amount of the hot Milk, Butter, Salt and Pepper. Once mashed use an electric whisk to whisk while slowly adding the remaining hot Milk until light and fluffy.
  13. Check on the Fish Pie after 25 minutes, remove when the sauce is bubbling and slightly brown at the edges. Usually between 25-35 minutes.
  14. Done and ready to serve!

Assemble the fish pie Cut up the potatoes, and boil in lightly salted water until tender; drain, add the butter, sour cream and milk, mash until smooth, seasoning with salt and pepper. The fish is first poached with the mushrooms, then topped with mashed potato and baked in the oven. If you cannot find the specialty mushrooms specified in the ingredients, use field mushrooms or your favourite variety of mushrooms. Pour the fish stock and milk into a large saucepan and bring to a gentle simmer. Remove the fish pieces with a slotted spoon and set aside.
