  1. Prepare 200 gm chicken thigh fillets, cut into bite size pieces

Season chicken with salt and pepper. Cook noodles according to package instructions, set aside. Heat a large wok or pan. Add a bit of oil to the pan and cook chicken until it's golden brown.

How to cook Chicken Chowmin:
  1. SAUCE: Mix together cornflour and soy sauce, then mix in remaining ingredients.
  2. OTHER PREPARATION: Marinate Chicken: Pour 1 tbsp of Sauce over the chicken, mix to coat, set aside to marinate for 10 minutes. Noodles: Prepare the noodles according to the packet instructions (my pack says soak in boiled water &then drain).
  3. Heat oil in wok or large fry pan over high heat. Add garlic and stir fry for 10 seconds or until it starts to turn golden - don't let it burn! Add chicken and stir fry until the surface gets a tinge of browning but inside is still raw - about 1 minute.
  4. Add the cabbage, capsicum, carrot & onion. Stir fry for 1 1/2 minutes until the cabbage is mostly wilted.
  5. Add the noodles, sauce and water. Stir fry for 1 minute, tossing constantly.
  6. Remove from heat and serve immediately.
  7. Done and ready to serve!

Pour the marinated chicken into a large pot and cook over medium-high heat. Add sesame oil to the bottom of the pot and add the onion, celery, carrots, and cabbage. Sauté until the onions are translucent. Place both of the ramen noodle bricks into the bottom of the pot. Pour in chicken broth over the noodles.
