- Take 1 1/4 cups warm water (105-110 degrees F) (1 1/3 cup for more moist dough)
- Prepare 1 envelope rapid rise yeast
- Prepare 1 tablespoon honey
- Prepare 1 tsp brown or white sugar
- Take 1 1/2 teaspoons kosher salt
- Take 3 1/4 cup bread flour, plus more, as needed(I use sams club bread flour, needs to be high gluten flour, recommended smaller bag option King Arthur Bread Flour)
- Use 1/2 cup Bobs Red Mill Artisan Bread flour(chosen as best option in my area that includes Malted Barley Flour) For added color and flavor, malted flour also helps the yeast to activate
- Prepare 2 Tbsp Shortening
- Take 1 Tbsp olive oil
In the bowl of a stand mixer fitted with the dough hook, combine the bread flour, sugar, yeast,and kosher salt. Add the yeast mixture, then the salt and rye flour; mix well. Drizzle olive oil on a large baking sheet and use fingers to coat thoroughly. Remove HALF the pizza dough from the bowl.
How to make My Favorite Pizza Dough:
- Combine water, yeast, honey, sugar, and salt in mixer bowl ; let stand until foamy, about 5-10 minutes.
- I prefer to add my ingredients in sort of a wet, dry, wet method. So we add the 2 flour's to the yeast water mixture, then Shortening, and olive oil.
- In the bowl of an electric mixer fitted with dough attachment, beat flour, olive oil and water mixture at medium speed until well combined.
- Transfer Dough to bowl and lightly oil as my dough recipe is meant to be on the drier said per my preference(if want a more moist dough can use added amount above), if needed can use dough after letting it rise at least 30-45 mins. If possible let dough rise over night in fridge. To rise in fridge cover bowl with cling wrap to seal in moisture.
- Remove from fridge and split dough in half to create two large dough balls tuck and seal each ball w/ rolling under of dough where cut to seal in moisture. Then let sit room temp 3-4 hrs after taking out of fridge.(If time allows) Usually makes 2 medium pizzas/ or 2 thin crust large.
- Working on a lightly floured/or corn meal surface, gently knead dough before using. Corn meal is my preference, but alot of people use flour.
- Preheat oven to temp before cooking @ 450F
- Stretch and top your pizza and put it in the oven to enjoy!
- Done and ready to serve!
Stretch pizza dough into a large rectangle, pressing with fingers to finish forming. Leave at room temperature for one hour. The dough should be soft and elastic, but not sticky; add a little more flour if needed. Shape the dough into a ball and place it in a lightly greased bowl. Cover the bowl and let the dough rise in a warm place for one hour.
