Prepare the seafood: Rinse and chop the squid into ½ inch wide rings/pieces, then remove the skin, rinse again and pat-dry. Hold off on starting the scallops until you start your pasta. Remove the muscle from the scallops and pat dry with a paper towel. Season the scallops heavily with salt and pepper.
