  2. Prepare 4 slice shortcut bacon
  3. Prepare 1 can crushed tomatoes

  8. Prepare 2 eggs
  9. Prepare 3 cup breadcrumbs

  4. Cut chicken breasts through the centre, horizontally, so you have 4 pieces of breast.
  5. Coat chicken pieces in flour, dip in whisked egg, then coat in breadcrumbs. Place in 180 celcius oven for around 15 mins, turning once.
  6. Once chicken has browned, remove from oven, add generous amount of sauce to each breast then top with bacon piece. Add tasty cheese on top of bacon and return oven for around 20 mins, or until cheese is golden.
  7. Done and ready to serve!

Dredge the chicken in flour, tapping off the excess. Dip chicken in the beaten egg, then dredge in breadcrumb mixture, turning to coat both sides. The chicken will finish cooking in the oven. Lightly grease an oven tray (or baking dish) with non stick cooking oil spray; set aside. Whisk together eggs, garlic, parsley, salt and pepper in a shallow dish.
