Place slices of mozzarella on top of chicken. Grate mozzarella on the large holes of a box grater into a medium bowl; add Parmesan and toss to combine. Place the chicken cutlets between two pieces of wax paper and pound thin. Spread the seasoned flour out in a tray or a plate, beat the eggs in a shallow bowl, and spread the bread crumbs out in a tray or plate.

  1. Filet chicken breast in half. Roll out to desired thickness. The thinner it is, the crisper it will be and the faster it will cook. Make egg wash by beating eggs in bowl large enough to lay chicken pieces in. Mix together bread crumbs, garlic, and grated parmesan.
