Coat the bottom of the tagine pot with a thin layer of olive oil. Pour the marinated vegetables into the pot. Clean the vegetables, then cut in long segments. Toss the zucchini and carrots in the spices.

  1. In a bowl, mix together ginger, garlic and all the dry spices along with olive oil. Keep aside.
