Ingredients and seasonings required exist for prepare
  1. Prepare 500 gm bittergaurd big size(kerela)
  2. Prepare 100 gm salt
  3. Prepare 200 ml vinegar
  4. Take 200 gm sugar
  5. Use water for boling the bitter gaurd
  6. Prepare for the sauce
  7. Prepare 100 gm jaggery
  8. Prepare 100 gm tamarind
  9. Prepare 120 gm red whole kashmiri red chillies
  10. Prepare 100 gm tomato puree
  11. Prepare 1 tbs degi lala mirch
  12. Prepare 1 tsp ginger garlic paste
  13. Prepare 1 tsp cumin powder
  14. Take few curry leaves
  15. Use As needed cornflour for frying

When water starts boiling, reduce the heat to low. Add rice flour with one hand and keep stirring with your other hand. Turn off the heat and mix well. Check the hotness of oil before dropping in oil.

How to cook Sweet chilli kerela rings:
  1. Peel the skin of bittergaurd.
  2. Cut the both end of bittrgaurd and scoop of the inner flesh and seeds.
  3. Cut the 5 mm sized of rings like shape of bittergaurd.
  4. Marinate with ample amount kf salt and leave for about 4-5 hrs or overnight.
  5. Give the good wash and boil in water,vinegar and sugar
  6. Remove the water and boil again with water,vinegar and sugar
  7. For the sauce
  8. In a saucepan boil jagerry,tamrind,degi mirch,cumin powder and salt.
  9. Boil untill jageery and tamrind completely dissolved.
  10. Heat a saucepan,add curry leaves and tomato puree.
  11. Then add tamrind liquid and cook for about 15-20 minutes.
  12. Heat oil for frying the bittergaurd
  13. Dust some cornflour on butergaurd and fry untill crisp.
  14. Another saucepan add 2-3 spoons of sauce and stirr fry.
  15. Sprinkle some amranth for garnish
  16. Done and ready to serve!

Deep fry the rings in low flame till all the bubble ceases. Afterwards, wash the spring onion and finely chop it in a small bowl. Then, peel the garlic cloves and finely chop them as well in another bowl. Mix tomato puree, ketchup, soy sauce, chilli sauce, chilli powder, sugar,lemon juice and salt in a bowl.
