Once cooked add to mixing bowl. In same pan add a little more olive oil. Add green pepper, onion, garlic & sausage. Once onions & peppers are done add everything except sausage to bowl. (The sausage needs to be cooked a bit longer). Once sausage is cooked cut into bite size pieces using spatula. Add to bowl.
  2. Add can of green chilies, shredded cheese & salt & pepper. Mix. Add beaten egg & mix.
  3. Place mixture into a greased muffin tin. Push mixture down, this will fit perfectly into a 12 muffin tin. Bake for 27 min, then broil for 1 minute. Let sit 5 minutes. I used the back of a fork to remove muffin & place on plate. Add toppings, enjoy!
  4. Done and ready to serve!
