When the chicken is cool enough to handle, discard the skin and remove the flesh from the bones, shredding it finely by hand. Bring to a boil over high heat. Skim off any foam and reduce heat to a simmer. Add in shallots, garlic, candlenuts, and peeled turmeric root.
