Cook, stirring often, until the onions are translucent and the mushrooms are browned. Cook the rice: Add the rice, stir, then pour in the wine. Heat the olive oil and butter in a medium saucepan over medium heat. Pour in a quarter of the chicken broth, bring to a boil and cook until absorbed, stirring frequently. This helps to give you a creamy risotto.
